Roasted Tomato Basil Soup & Grilled Cheese
25 mins prepServes 6
A comforting recipe for roasted tomato basil soup, perfect for pairing with grilled cheese. The recipe provides clear instructions for roasting vegetables and simmering the soup, with optional additions for creaminess or dietary preferences.
1. Preheat oven to 400F. Quarter your veggies and lay out on a large baking sheet lined with parchment paper. Drizzle with olive oil & generously season with salt and pepper.
2. For the garlic head, trim 1/2 inch off the top & drizzle with olive oil + salt. Wrap in foil or parchment and place in the oven along with the veggies. Allow everything to roast for about 40 minutes.
3. Meanwhile, heat a large pot to medium heat. Add butter, diced onions, oregano, thyme, and some salt and pepper. Cook, stirring occasionally, for about 10 minutes until onions are translucent.
4. Once the veggies are done roasting, add them to a blender and blend until smooth (you can add the onions in to blend too if you’d like), or, add everything to your pot and blend with an immersion blender.
5. After blending, add everything back to the pot and turn to medium low heat. Add in broth + salt & pepper to taste. From there you can add in any additional add-ons you want (as listed in the ingredients). Allow tomato soup to simmer 10 minutes before serving. Add in thinly sliced basil. Serve with grilled cheese, and ENJOY.
